Chai Oatmeal From: Peter Shirley 1 1/2 cups milk 3/4 cup rolled oats 1/4 tsp salt 1/4 tsp cinnamon 1/4 tsp cardamom 1/4 tsp coriander 1/4 tsp turmeric a drop or two of vanilla extract 2 tsp honey 1) In a saucepan, mix salt, cinnamon, coriander, cardamom, turmeric, and milk. Whisk to mix nicely. 2) Heat spiced milk over medium heat. Just before milk boils, turn heat down and simmer for five minutes. 3) Add vanilla and honey. Whisk until honey is dissolved. 4) Add oats, stir once or twice, then cover and simmer for eight to ten minutes, stirring occasionally. Since oats vary so widely in their cooking time this is really more of a guideline... 5) Enjoy! This is good as-is or with nuts, apples, etc., mixed in to taste.
